Honestly though the biggest problem with Dex builds is as you have noticed, there aren't a huge amount of support items prior to the endgame. Thorny Cracked Tear, Millicent's Prosthesis, Rotten Winged Sword Insignia, Lord of Blood's Exultation, Shard of Alexander, all very late game items and all essential to creating a strong Dex PVE build.
Traits To Increase. In early game you should focus your points into Vigor, Intelligence, Mind, and Endurance. 40 Vigor, 60 Intelligence, 55 Mind, and 50 Endurance will be good goals for Middle to End game.
