If your getting a cam to run only 6000 rpm's, then the 185 will work fine and the 195's are approaching overkill. At 7000-7500K the 185's are too small. The 210's would be a good choice for a high rpm 383/406, or a 6000 rpm 414-434 build.
Lackluster performance, poor response just to name a few. Despite it being a 427, it's still a small block. Another thing to consider is ACTUAL engine operating range. A 220cc head that never sees 5500+ rpm is going to be a poor performer on the street in some cases. Lower compression does have an effect.
Re: What blower heads for a sbc? I'd look at it this way: camshaft duration will determine the max rpm you will run. Head flow needs to be adequate to work at that rpm, with the boost you're running. Probably you need the highest flowing heads you can buy with the money you have available. My fabulous web page.
