There are some who join your village as a result of quests. Skills level at different rates. Extraction skill is the most difficult to level up. Dang on the skills part. I know in Single player, you could get some with over 3 via questlines. I did not know the villagers skills leveled at different rates.

Hunting is just hunting and the huts are quite efficient (and produce plenty anyway) Diplomacy gets to lvl 10 so quickly with the market stalls. And Crafting is also quick the higher the tier of the produce is. Farming is generally faster with animal breeders that also collect things (so no stables) But excavation.

Word of advice: do NOT get too many villagers early on. Villagers are a liability until their skills improve. You're going to have to pick up the slack (preparing meals, making tools) until they've skilled a bit.
