The seal from Toyota is ~$20 and takes maybe 30 minutes to swap out. Yeah you're supposed to change the brake shoes as well if they are saturated with diff fluid, but I often clean them good and don't have problems. For the transfer case you definitely want to use a GL-4 rated fluid such as the 75W Redline MT-LV fluid mentioned above. A GL-5 rated fluid is harsh on the brass synchros. As for the differentials, any quality 75W-90 will do. FWIW, I'm a second owner and sitting at just over 50k miles on original fluids.For my front diff the fill plug requires a Allen wrench or socket. ALWAYS take the fill plug off before the drain plug otherwise if that fill plug gets stuck you have no way of adding fluid. Also it'd be wise to do the rear diff at the same time.
