What about the server-console.txt then, if you are the host one of those files has to be created, since that is the server log. There should be several files in the Zomboid folder There are Logs, Lua, mods, Sandbox Presets, Saves, Server, Workshop folders, console.txt, latestSave.ini, logs.zip, options.ini.
